How hard is it to change the gasket on the timing cover? Ford technician noted that the cover is leaking, during a routine oil change. Could a camshaft/crankshaft seal be the culprit behind the cover?

You'd be better off just pulling the engine it would make live a lot easier. Upper intake, Valve covers, alternator and bracket, ps pump, ac compressor, and crank pulley all have to come off. crank seal is the only thing that could be leaking but I hope a ford Tech would catch that and not just say the timing cover.

You might clean the engine carefully and add some red dye to the oil and then check again for the leak. There are kits that include the necessary items for this type of leak checking at most well supplied parts houses.

When the fitting on the power steering pump leaks it runs down the timing cover and can look like the cover is leaking. check the fluid levels.
