Some people reuse their manifold gaskets. They are cheap though so to each his own.
You could also try remflex gaskets if you are concerned about exhaust leaks. I have used them and they worked very well. About 3x more expensive than the OEM ones though. I only used them when I installed headers with the engine still in the car and I was worried about being able to torque all bolts properly. When I assemble a motor on a stand I reuse gaskets if in good shape.
I do not reuse the studs or bolts. I buy and use allen bolts. Much easier to install and remove in my opinion. I have the exact size written down at home and I can get the info if needed. Be sure to use anti-sieze on the threads of whatever fastener you choose though. You will be very happy you did should you ever have to take this apart again.
I also suggest using a lock washer on the allen bolts (if you go that route).
