I'm a little confused with the two classes. Will my car be in SP or SM now?

I think the 3.0 block puts you in SM, as it is beyond the overbore allowance for SP. I'm not sure what else you have.

Street Mod, since the motor you have in is technically not an overbore of a stock motor, and even if it were it's probably well over the limit for overbores.

One of the WNY SCCA is at my aunt's shop downstairs right now, I better go ask him.
