what would make an amplifier perform so badly compared to another one, noise contamination wise?

what are the probable culprits?
Main differnces in amps (not in any order)

Circuit design/Layout
Quality of Op amps (audio input devices)
Quality of MOSFET devices (lots of choices available)
Power Supply (rail voltage and cap ratings) Rail voltage determines the amps power capability (or lack of it depending on the manufacture wink )

These are the things I look at on amps. They will tell alot about an amp without having to power it up.

Some amps are just bad designs, some are good, but offer inferior components. You have to remember though, they amps job is to amplify what comes in

crap in -> Amplifier => AMPLIFIED CRAP

Finding your noise is just a matter of time. I would lean away from the "rca to close to my power wire" theory. It does occur, most of the time though its a ground problem (like too many seperate grounds instead of one common ground)

Simply Unplug one device at a time (bypass it) eventually you see where its coming from.
