Most of these setup's "gains" over stock could be had by the stock setup replacing the resonator and mufflers with straight through design units.
The stock setup would likely even out perform most of these then! 
What do you exactly mean by baffled. The reason I ask is because I have the bassani system, and the mufflers look like they go straight through to me.
Also the stock setup is a 2.25" O.D. and the after market systems are 2.25" I.D. so if the stock exhaust is constructed with 1/8" steel that is really only a 2" I.D. exhaust so the stock exhaust with the removed resonator and different mufflers would give much better performance gains, but not as good as the aftermarket systems.
