I'd point you towards the truck variant of the Cherokee, the Comanche or whatever it's called. Same platform as the "XJ", so parts are dirt cheap for the most part. 4.0 I6 are great, some years have a bad valve cover design to where they will begin to leak, but that can be fixed easily/cheaply. I'm looking around for one personally, and most seem to be owned by older men that babied them.
