It does work much better when the herb is dry, as I found out last night. I have yet to taste it, but it should be good. What other herbs or spices do you add to your salsa? I generally stick with just cilantro, but it might be interesting to try out some other stuff to see what happens.

Rinse off any dirt under cool water.
After washing the cilantro, hold it by the stems (best if the bunch is still tied together) and give it a good shake to remove excess water.... maybe even pat it on paper towels.
Then, still holding it by the stems, roll it on your cutting board to gently fold/press the leaves together, tucking the ends in... when the leaves are in a more manageable compact group, they are very easy to cut. Just cross-cut until you reach the stems, or stop earlier if you want less stems.

Since the most flavor is in the leaves, wash and dry as mentioned before, but then pluck the leaves from the stems. Dice only the leaves and discard the stems. Don't dice them too much, either.
