they would take all the leftover chicken parts, put them in a large bowl with holes in the side, then spin it really fast (think washing machine on spin cycle) until any meat left would exit the holes and only bones/cartilage would stay in the bowl. Hey, that's how we make egg rolls at the chinese place i work at! We take the leftover food from the buffet at closing, mix them up, add some cabbage, spices, and sauces, then stuff them in egg roll wrappers...a week later!

I am so serious, and it's not against any FDA rules at all.
