OOO and I never believe ford or people on this board and have found many mistakes in shop manuals... so that's why I keep on keeping on with my keeping on about what I hear and what it may could possibly might be maybe but probably isn't but better safe than sorry.

Technically, the 2.0L Zetec is non-interference.
However, since the intake valve to piston clearance can be as small as 0.004", problems may arise at high RPM due to both wear and valve float. This is no doubt what Unorthodox Racing fears as a liability, and what has caused some engines to be destroyed.
Decking the head would (as in many cases) change the engine from non-interference to possible-interference.
Any engine to be run at high RPM must have valve springs in good condition to prevent valve float.
BTW, the cut-outs in the pistons are called valve reliefs.
