Ok, I know a guy who can get me a good deal on magnaflow mufflers and build me a cat-back system (mandrel bent of course) consisting of 2" pipe and the muffler, then i have to supply the tip. He can do that for $200. Also I'm going to get a K&N panel filter, becuase im not convinced about the cones until there is a true CAI out. Should I go ahead and get a high flow cat too? Im not tryin to be super fast or anything, just sound better and be a tad quicker. So what do you think?

I would go with 2.25 inch pipe at the minimum or 2.5 inch pipe if possible.

Isn't 2.5 a little big for an NA pretty much stock engine?

For a dual exhaust setup, 2.5" could be stretching things. If you've got single on your SE (like me), 2.5" cat-back should be fine and work well. I expect to do mine in 2.5" pretty soon. The restriction in the stock Y pipe pretty much nullifies things anyway.

Must be that jumbly-wumbly thing happening again.

Go to 2.5 at the risk of losing a significant amount of low end torque. You will notice it.
