Skip the 160 deg thermostat, its not gonna do much of anyhting for you, if the car is running hot, the t-stat is already open. What you need to do, is monitor your coolant temp, and find the range where the car runs. If this is just a little high, an air to oil cooler is usually the perfect answer. If the water temps tend to be a lot higher than desired operating temp, then a larger rad core, usually more rows deep should be the answer. unfortunately, you would probably have to go custom on the rad though. fwiw, I've heard good things about Griffin from some racers, but never used one myself.

Yes, your 3L does have a knock sensor. The 3L had one too, jsut a different size than what your factory 2.5L had. We (read I) drilled out the hole and retapped for the newer sensor. 
The similarities from tuning my '86 Trans Am compared to the new OBD-II Ford ECU is amazing. Both have knock counts for retard, attack rate (how many dregrees timing is pulled), and recovery rate (how quickly it returns to normal spark after the knock retard).
Tuning is done by trial and error of adding/deleting spark along with fuel until maximum HP/TQ is reached at any one problematic RPM level. Once you add spark and fuel and neither makes any improvement, then you back off to your minimum ratio of spark/fuel at the maximum HP/TQ level (i.e. when adding fuel to quench spark knock no longer adds HP/TQ). Simple.

The 165 degree thermostat is in and the car is running cooler then ever. I let the car warm up in the garage for about 10min until the oil was at the correct pressure. Then check the engine coolant temp and it was steady at about 175 degrees vs the 195 degrees with the other stat. I went out and beat on the car for a bit and when I got back it was pretty steady at 180 degrees. So the stat works! Keeps the car cooler then the stock one.

Did you ever order the SVT radiator? I know Terry Haines or Cardoc (or both) on FCO was saying that there was no difference, but I know what I read and I'm pretty sure someone can clear this up. I'm positive I read the SVT radiator was larger, I think its in the little handout that comes with the owners manual.

Chris told me that the SVT RAD was almost twice as thick as the stocker, it was a HUGE diff, makes me wonder what the FCO boys were talkin' about.

From the later I can definitely understand. 'nuff said.
From the former I would not think he would be so far off base on this easy one???
The SVT radiator is definitely thicker (+14mm) and has a higher fin count.
BTW - my car hovered between 170-175 degrees today in 98 degree heat (110 index) and 80% humidity. My primary fan kicks on at 184 if some folks thought that was why! 
I love the 160 t-stat!

I doubt Terry Haines said that. I was talking to him if he had a hook on the deeper SVT rad. 2 weeks ago. He said he didn't. He is fully aware that it is deeper. I just received mine last week. I can post a pic of the 2 side by side if need be. The SVT rad. is definately larger.

I talked to Terry about the SVT radiator fitting before I bought it and he knew that it had more fins and that it was thicker.
