By taking off the thermostat you have no control if you car runs hot or cold..that is very bad...who ever did that is asking for a lawsuite if your car breaks down.
You AC not working sounds like a problem many people have had...its a bad wireing harnest (or resistor...not quite sure) on the passanger side. There is a recal for it.
I recomend putting a NEW Thermostat in......the coolant sensor should have no relation to you over heating.....but a bad water pump, or thermostat does...Do you have the V6 or 4 cyl....if its a V6 the water pumps on our cars suck...reconmend an aftermarket one form Auto Zone...it comes with a metal Impellaer insteatd of stupid ford plastic one.
