Ford Factory Service CD states it. I ran across it when going through them. This was for the 2000 model year.
180 degrees for V6 & 192 for I4
It also lists pretty close to the same specs you list for the Ford manuals you posted (was 180-184 opening IIRC - it's been a while)
Either way you do not want to go up in temperature to a 195... You want to run as cool as possible and still be within the computer's operating temperature.
