If the E1 wheel was 49mm I would have had no problems with my 18 x 7.5" wheels with a 42mm offset.

The stock E1 wheel is stamped with 49.5mm, if I get over to where my race tires are stored today I'll take a picture for you.
And yes you still would have a problem with your 18x7.5's. Think about it, if the stock 6.5" wheel has a 49.5mm, a 7" wheel should be right around 43mm offset to keep the inner dimensions about the same, so a 7.5" wheel whould need something about 37mm or so.
