Does the heatshield material really make that much of a difference? I realize that metal is a poorer insulator than plastic, but it seems to me that the main job of the heatshield is to divide the hot air from the cool air, and that any heating of the cool air due to the conduction would be relatively minor since it's a flat panel.

I agree. The choice of material is irrelevant for this application - Maybe if we're talking about a spacecraft radiator or something, but not here, where the dominant mechanism is convective, by several orders.
