Yes, this is like ours. We have two "symptoms" but I think they are the same thing. It goes like this:
Just drive a day or two or three. At some point we'll be at a stoplight or parked. Take the foot off the brake, hit the gas, and the car moves like an inch, and then the engine just dies. No spit or sputter. Just like the old days of a carburator and no accelerator pump. Hit the key and the car starts right up. But no check engine light will come on. Just as you say, the computer thinks everything is fine.
Now the other symptom... just be driving along, no big deal. The car is 100% fine. Going down the road, the CEL comes on. The car still drives fine, but the lights on.
Take it to the dealer or Autozone and it gives the PO171 code. Reset the computer by disco the battery, and it's fine for a few more days. In fact, it might even come back on before it stalls again, or it could go for a week w/o coming on, but during that time, it'll stall 2-3 times.
You are right. If a car stalls, and the CEL does not come on, that's a defect in the programming/ECM.
