All this is caused by bad quality control from ford on the temperature sensors. I've had 4 so far and each one has read differently, thats why ford dont put actual temperatures on the guage

Since fitting an accurate oil temperature guage I can verify that all 4 of my guages that collectively read O, M, A and L when the fan cuts in all result in the same engine oil temp

So dont worry unless it goes higher than normal.

PS so far I have found 3 temperature senders on the Zetec. 1 is above the thermostat, 2 is in the air intake and 3 is a small one down on the lower engine block. All are routed to the EEC unit so it is the computer thats decides the dashboard guage position
