I can count at least 20 Mondeo's here in England who began to read low just before pump failure and meltdown, noth Zetec and Duratec
I believe (and this is pure conjecture) that as more of the impellor blade vanishes that the flow slows down in the engine leading to hot and cool spots. I think the sensor is a cool spot as it picks up the air flowing over the radiator and is a large metal chunk and hence has some cooling ability of its own. Of course when the last bit of impellor goes then there is no circulation and meltdownm follows very rapidlly.
The differences in peoples temperature readings is due to the poor quality control on the senders. I have hadd 4 different sendors and all 4 read at a different part of normal. Anything from N to L can be OK. Its above or below, normal temps you need to spot, but of course you need to know what is normal for your car.
I now have accurate Oil and water temperature guages tapped into my engine for more accurate monitoring. Currently My fan comes on at exactly 101 deg C, the thermostat opens at 92 and my engine will sit between 85 (Motorway at high speed) and 101 (London Traffic). I have an Oil cooler fitted as well just top make sure.
