It's been a whole day and I'm still excited about this project. I met another gearhead down the street from me who does tons of work with Mustangs. He advised against the 281 and said the 5.0 would be a much better choice. I'd still like to go with the F20C (S2K motor), but it would just be SO expensive! We'll see how it works out once I get some bills paid.

Go with the tried and true 302. Most likely not as complicated an install as the S2000 engine. Cheaper go fast parts as well.

But it's dang heavy. One big cast-iron block. He said the 281 is massive compared to the 5.0, but they still weigh in about the same. And in that little MG? I dunno... It'd make for a good drag car, though.
