You can bet whatever you want between the table minimum and table maximum on any hand. Some casinos get concerned if you suddenly start changing your standard bet by a large amount - you'll get pit bosses and eyes in the sky watching hard for card counting or cheating, but as long as you aren't doing either of those things, you will be fine. However, each casino can enforce rules as they see fit, so some might get uptight and ask you to leave. Nothing illegal about it though. Much less likely to get tossed in a place with multiple casinos (AC, Vegas) because they know you can just take your money next door.
