Ok Ive already shaved off some of the wheel well, but apparently the rub is back. Whats the best way to bend the sheet metal back up and tuck it up? Thanks for any help.

Which way did you tuck the metal. I took my crow bar used a cloth and pried the metal lip(the part that rubs toward the rear of the wheel well, it sticks out) And used the tire as leverage and bent it outward. I have had my car loaded to the ground and no rub.
HOpe that helps, but it sounds like you have already tried that.

I haven't rubbed either. I have 215/45/17 and 17x7.5 on a E0? What is the offset of your wheels?

?? You don't know I take it? I would think your offset is probably 40mm or less that is why it is rubbing.
