I would just go into STS/STR unless you think that your competition is going to want you to tear down. The worst case is that you have to hand in the trophy and lose the points. It would still be closer than going head to head with vettes, and other cars that clearly have the advantage. Really hp is overrated when it comes to autoxing, depending on the course. But most courses are tight enough to keep you under 60mph where you really can't use the extra bump, sure a 3liter will be quicker than the 2.5 but not by much. Play the game and bend the rules, I would. IMHO
