Since my cats are plugged and I can't top 140kph/84mph how much HP is my engine likely producing? Seeing as I had a 86 626 with 93HP that was boxier able to do 184kph/112mph I was curious how much power I'll get back with my precats being replaced? :p

This is in no way true, but lets say the fraction is 93HP produces 112mph. So 93 * a = 112...so a = 112/93. So hp * (112/93) = 84...so using your '86 626 fraction your motor is currently making about 70HP. So if a stock Zetec is at 125 your car should be making, with the MTX, like 105HP. So using your fraction again, you should be able to go 126MPH without the speed limiter. Which is pretty damn close to how fast a Zetec will go.
So you can very roughly approximate your car now at around 70HP.

The worst thing you can do to that car is run it hard at WOT with plugged cats. You are begging for a blown head gasket.
Replace them, gut them, or blow your motor. It's that simple.

From what I can tell,,, you'll know when your cats are bad. Normally they scratch and bite a lot. Will going real fast make cats fail quicker?

No Joke!!!!! Black flag that one and replace the cats quick! You only do more harm than good trying to drive it with bad cats! Put it this way....The night I found out my 84 cavalier's cat was bad, I called dad to ask why was my exhaust manifold GLOWING RED!!!!
Driving fast??? Depends. How much RPM are you turning? Think about this. A cat hardcore metals in it. I forget the main one and the reason why cats are expensive. The reason a cat gets "clogged", as it was explained to me, is that the metals melt and then restrict the airflow causing it to clog. Do I think that hardcore driving will lead to cats failing? Maybe, maybe not, but down the road they may cause them to fail a little earlier than normal. But this can be said of anything that fails early.
