Pricewatch is usually pretty good. Occasionally, Fry's has a deal taht whoops any pricewatch deal. Dont buy a motherboard, processor, or RAM from Frys unless it is still factory sealed. Obviously anything with the "Fry's Quality Seal of Approval" is a bad thing, but becomes a PITA when you have to return/exchange the expensive stuff.
UDMA is fine. One server will hardly notice any difference. SCSI is faster and many SCSI controller cards allow some form of RAID or another, but so do many ATA 100 cards now. IDE is/has been/always will be the better deal for the money.
What server software are you running?? Mandrake with Apache? I think the RAM would be the most important part of the system is you are tweaking it for speed. You can cache the most commonly referneced files in RAM for a 0.006ms access time with no seek time.
Then again, if you aren't running Apache, or a webserver... then I don't know how much I cansay that would help.
