Are you staying N/A for sure? I'm assuming you're using the 3.0L UIM? I'd be willing to bet the 65mm 96+ Mustang GT T/B coule be made to work with that UIM. You'll just have to modify the linkage a little bit(which I've yet to do to get mine running).
As for the MAF, definitely stay with your stock SVT MAF. You won't outflow it unless you're running a turbo/supercharger, and it's a hell of a lot easier to tune with it.
