The larger the offset (ie. stock 49mm) the more the wheel will be tucked in (pushed towards the strut) giving you more room provided you don't go too far, go too big of an offset and the tires will rub the strut. The smaller the offset the more the wheel will be pushed out towards the fender lip, too small of an offset and the tires will rub the fender lip and require rolling.
225/40-18 on a 7" wheel with a 45mm offset should fit very nice. As I said mine are 225/4-18 on a 7" wheel with a 42mm offset and they are close and rub the fender lip very little only on big dips. I'd imagine that when I install my Koni's it will probably solve my rubbing issue for the most part.
