That all depends on what width you go with...6 1/2", 7", 7 1/2", or 8". You will have a tough time with 8" though, that's stating to push it especialy if the car is lowered. You realy have to just play with the numbers and compare with other wheels if you have that option. I have 18x7 OZ Superleggra's that have a +42mm offset with 225/40-18 tires Eibach springs that will rub every once and a while on a big dip. They are prtty close...I wouldn't go any more then +42mm on a wheel/tire combination that big. With a smaller 215/40-18 you may get away with a little more offset. I was running 17x7 FSVT wheels (+49mm offset) and 215/45-17's without any rubbing at all ever.
