These are relevant questions and more than a few books have been written on the subject. You could easily argue that the church/christianity has changed dramatically over the years. Catholics and all other christians alike. Probably the reason why there are so many denominations today in the first place. When you don't like the way your church does things anymore, go start your own, Luther. Just in the U.S. you can trace differences in the ways American christians have viewed the significance of Jesus for example. Christians have not always stressed having a personal relationship with Jesus as critically as it is today. To read up a bit on this I recommend the book American Jesus.
