Undo the nut, then lift it up and stick a sawzall under the head and cut the head off. Then when you reinstall the bolt stick it in from the bottom - I've done this and NEVER had an issue.

Just make sure you use a Grade 8.8 or better bolt of the same diameter and a locking nut, or use two nuts so you can jam them together so they don't come loose.
