I took a look at the schematic, I don't think any switches would override dash controls. There are 2 pressure switches, 1 kicks the fan higher, one cuts out the compressor to prevent overpressure. The relay you removed could stick, check its contacts while it is removed. This might take a bit of patient study of diagrams. Does your check engine light come on, scan for codes even if it does not.
