Hissing with gas cap off, Normal. If you open real quick, the air comes out quick, if you just "do the clicks" slow, it will hiss longer.
If there isn't a major leak, A/c recharge, yes. The low pressure valve is located (look for a black plastic cap) on a horizontal pipe, on top of the radiator, closer to the battery). There is an earlier post on this.
