No. The grownup way is to appologize and drop it. The "almost" grownup way is to make a big issue of acting grown up and then say sorry.
The two are not to be mistaken for one another.

The other grown up aspect is to stand up for what you believe. You can do that without trashing on a whole group of people.
Finally, it is not OK to get counter-offended once you've offended someone else. (just a little levity here)

We all agree to disagree and grow thicker skins and move on.

BTW, I'm not really upset. I just felt that was out of line to generalize so much.
