I got a Pioneer AVH-P5700DVD headunit...
now the only place that will install it witha e-brake bypass switch is charging $125

Second issue...i got a factory amp bypass harness...they want to bypass the factory amp, run new speaker wires to each door straight from the headunit for $120.

How do these prices sound to those familar with car audio?
Should I go for it?

No other place near by will do do both of these things together.
