Hey guys, Rich, Lori and I talked late this afternoon and we decided that I will not be smoking any ribs.
We really only have one day to make a trip to the dyno & cruz around in the mountains. Add to that the fact that Hector and Kim(2) don't come out of their room until something around 11AM, I don't see how we could fit all that into one day along with 4 hours per rack of ribs. Since we are looking at 10 people, at the least, I will have to smoke somewhere around 5 racks. That would be half a rack per person. Plus sides of course!
Now! If I had a big smoker, ala...
... then we might have a chance. But since we don't, I think we would be better off just hanging out at some of the great local places.
Lori had a great idea of what we could do for Friday night.
Since I will be working in Corinth, at that time, and will not be able to get off work until 5pm. She thought about us eating at this great steak house in Florence, AL. That will put Kim and I about 60 miles out and you guys about 66 miles out. So, we could all meet up there at around 6pm or so and eat a really nice steak in great little steak house. Rich told me that the roads, to and from, are pretty cool. Anyway, after the steak and a little chiling, we can head back to HSV and just hang out.
