One big thing that people rarely consider is Check Your Tire Pressure! Even if they don't look low, its worth it. 1 PSI can mean some significant MPG on a long roadtrip.
Other than that, it never hurts to check all the fluids, condition of windshield wipers, and you'll be good to go.
