What's a good way to hold the crankshaft in place while you remove the crank pulley on an ATX car?

I think it's fair to say that there is no "good" way.

The recommended way, if I remember right, is to jam a big screwdriver in the flywheel through a little port near the starter motor, or something like that.

Yes, on an atx that is the "right" way. On a mtx, not sure the exact procedure, but it involves someone holding the car in a certain gear or something. Though on my atx and a few others on here, we were lucky enough to just be able to remove it without sticking something in the flywheel.
