I wouldn't worry so much about what car to drive.
With some mods, the differences are miniscule; and the AI is horribly "rubber-band"-ish, so it doesn't really matter what you drive -- if you drive 50mph for 5 minutes the AI will let you catch up before the end of the race. Game Designers do that to continue to illusion of a close race. It works against you too. You'll get beat my a Peugot as easy as a Skyline and vice versa.
It's an arcade racing game, not a sim.

try the Eclipse , its totally different. Its way easier to handbreak turn around corners and such. Its arcade racing sure , but it doesnt mean different cars dont do certain things well.

I had an Impreza the first 90 or so races. I switched to a Skyline around then and finished with it.
Yeah, drag races were easier to win, and there was some loss of high-speed handling ability, but it wasn't nearly what there should have been; and once I got the last of the mods, there's virtually no difference between the 2 if I switch back and forth.
One thing I was really impressed with as far as the physics went was how your car could tip over if you turned hard enough with the e-brake pulled. I can't recall another game that even attempts to model that at all.
