In the morning I am going to replace the PS lines that run from the rack to the cooler and from the cooler to the res.
What I am doing is cutting the metal lines and replacing them with rubber ones(also duble clamping them) My question is: Is this safe to leave the rubber ones or should I replace with metal ones asap.

You don't state your car's year or mileage.
I believe you can get OEM replacements which if newer car I would recommend if reasonable cost.
Presumably you are leaving metal cooler tube at front untouched.
I played around and completed a similar replacement on a GM car 5 years ago and found out after that the OEM replacements were quite reasonable and had I known would have been purchased. Hose to smooth pipe connection always a potential leak point, whereas OEM have pipe flared/expanded at hose connection points.

I presume you are replacing due to leaks at hose crimps. Access for OEM replacement might be a deciding factor against, however, since things are cramped in these cars.
