if and when i convert over, which i am really leaning towards doing it, should i change my exhaust also? and if so, what would you recommend

Just ditch the exhaust, its too much restriction anyway. It also sounds cooler. Hell, ditch the exhaust manifolds too so you can tune by the flame color.

Stock SE intakes = 2" duals.
SVT intakes, 3L intakes, ported or polished anything and above = 2.25" duals (especially with headers).

I'd suggest a full 2.5" quasi dual or 2" true duals.
