I talked to Performance Wheel Outlet in California
and they said they will custom drill a set of
17"x 7" will a 41mm offset ( silver ) for $599 a
set. But it will take 3 weeks for delivery. Does
anyone know if you can fit a 225 tire on a 7"
rim with a 41mm offset will out rubbing ?

I used to run a 225 on a 7.5 inch wheel(it was recommended OEM) so it should work on a 7inch wheel just fine. Depending on the brand of tire, it might bulge ~slightly~ since each manufacturer has a different size footprint even though the size is technically the same. In any case, they should not be a problem.

As for rubbing, it may depend on what suspension setup you have. YMMV
