I would by no means consider myself an expert, but finding myself in the same position, I think I can still be of some help.
My 17x7s are 40mm offset, and with the Potenza S-03s in a 215/45/17, I have some slight rubbing on the right (passanger) side. I also have the Koni/Eibach setup, and prefer to keep it on full soft. I however have the rears about 1/3 to 1/2 to minimize the rubbing. W/out anybody in the rear seat, rubbing is very minimal and just on extreme bumps.
Some say the Potenzas version of the 215 is a bit wider then some of the other 215s, maybe it is just the shape of the tread/sidewall I don't know for sure. I love the wheels and tires, so losing them is not an issue, so after seeing Buckshot's 245s and his fender roll job, looks like I'll be rolling some time in the near future!
Also, if you have a 99, it is a E1. 98s are E0, 98.5 + (Wheel change) are E1s.
