Go with the 225/40 rubber, they will save your rims & lower back... If you want handling buy a good tire. I'm running Toyo T1-S. If you only want looks get something like the Toyo FZ4.
Grip doesn't go with profile BTW, have you seen an F1 on low profile rubber lately?? Construction, tread pattern and compound make the difference... Handling is all up to your suspension after that. I've seen many a Civic on slim 17" rubber get waxed at the autocross by guys running R compound on 13's...

Aahh, beginners

There is a LOT of choice of very good rubber to be had in the 225/40 variety. I suspect the new 225/35 size to be more of a show item so that all these Civic owners can finally fit 225's on their 18's without crazy rubbing.
