Definitely do the front and back. I would also suggest you take the manifolds off the car when you do it, especially considering the engine is on a hoist right now.

Don't forget you will need a set of MIL eliminators to avoid getting a check engine light. Here is a how-to for building your own MIL eliminators : How-to

Little confused - do you mean

a) gut the two front precats and the back main cat?

-or-

b) Or do you mean gut both the front and back precats?

a) No - I would say do not gut the main cat with the precats. Maybe straight pipe would be ok, but not gutted. FWIW, my main cat gut with precats in place was great, my pre cats gutted with main cat in place is great now, but the tripple gut was just bog city in mid rpm's.

-or-

b) Yes - definetly do both precats, you do not want uneven restriction in the manifolds.
