Will a 3.0L uim and lim work on a 2.5l How hard would it be to do? Whats all needed?

On a 1 to 5 wrench scale for a DIY, it's about a 3.5 - 4 wrench job. The work involved isn't half as important as the knowledge about what functions are being messed with.

An SVT or 3 liter TB bracket modified to fit, or a totally custom set up.
A 3 liter EGR valve and tubing, custom bent. Or, you can fab your own using compression fittings and bendable tubing.
