You obviously are not talking about todays tight clearanced engines. (last decade or 2)
I prefer to protect my car at startup during it's time of greatest wear. Also I don't like falsely raising my oil pressure while sacrificing oil flow (volume) at operating temperatures.
On that note: I do think a 0W40 oil would be a good choice in weight.
However when I asked Mobil about it having viscosity index improvers than didn't say it didn't like they love to claim about their 5W30 oil. Viscosity index improvers are a bad commodity at any temperature, especially in a high strung, high performance engine.
And for the record - a lower temp thermostat will not drop engine temperature in the summer. Engine temp is regulated by the computer via the fans. The thermostat is just used to reach operating temperature faster and remain there in cooler weather, but I get the idea
