I haven't heard very many recording artists who cater to Hindu or Muslim music but I can recommend two recordings by Yusef Lateef:

Cry!-Tender

Eastern Sounds

Yusef Lateef is a Muslim Jazz Musician who plays a wide range of instruments; Saxophone, Flute, Oboe, etc. Pretty good stuff.

Thanks for all the rec's guys! I've got some great stuff to look for sounds like. And I'm not specific to Hindu/Muslim music, just that style. Which, as I'm learning, is more of an Indian style than anything else. So far, so good, keep 'em coming if you've got more suggestions. Also, I just found a few songs by Sukwhinder Singh that are right up my alley. Now that we've got some artists labeled, let's try and keep this thread going with any/all artists of this style of music.
