I think the dual exhaust would be better all the way around and with just the dual pipes, a crossover, and two mufflers, it would be light weight, not much more than a custom 2.5". Look at DemonSVT on his website he shows the dual exhaust setup.
I was going to say that I KNOW down in Mexico they have all kinds of exhaust shops that can knock up a dual exhaust because they do it all over the Sonora area! I lived in Tucson for many years and that's all you see is V8's with custom exhausts.
Ya, a dual exhaust for you V6 is principally the same as the V8s so just look at DemonSVT's website and then go to a shop.
If you get the MSDS headers, you'll be very happy and for $200 you can't go wrong! Very good combintion, MSDS and dual exhaust. Just make sure to buy some Thermotec 2000 degree paint for the headers and paint them all up well. If you can afford the ceramic coating that would work really nice too.

Just a WAG (wild ass guess) but I'd bet the x pipe design make the most amount of power up top.

I'd say that 2 or 3 would be best, but 2 is possible and #3 may not be possible since the engine is mounted sideways and that makes the front bank further away. So really, you want number two with a diagonal crossoverpipe.
When you route it under the car it will tuck up into the exhaust channel, but when you get to the back where it goes to turn around the gas tank, most people with duals will go straight under the gas tank and up the center, then split out into duals.
