My '99 has been running great for years, has about 60k on it. Last few months occasionally it won't start after being driven for awhile. Doesn't do it after short trips. Once it sits for an hour or so it will start again. By the time we can get it hooked up there are no problems. We replaced the fuel relays thinking it was a fuel pump problem and we have seen the posts regarding PCV and IAC, but mechanic says they check out OK. Saw one post saying the coil pack may be going out. Haven't replaced the fuel pump. Any ideas before I start changing things that aren't the problem?

does it even 'turn over'? Any sound of the starter trying to engage at all? I had a bonneville once that did this...turned out the starter was failing, and the heat didn't help matters.

Yeah, it cranks fine. It's almost like it's not getting gas, which is why we replaced the relays first (the fuel pump checked out ok).

How can I check the ECT and crank sensors without taking it in?

Try this thread for the crank shaft and cam shaft position sensors. Check for loose wires or connectors.
