WMP10, goto Tools, Options, Rip Music, Format: MP3, then choose the quality

on iTunes 6:
Edit --> Preferences
click the Advanced tab
under there, click the Importing tab
"Import using: " .. select "MP3 Encoder"

can import up to 320 kbps using the drop-down box underneath that too. Older iTunes versions skipped the "Advanced" tab step, I believe, if you haven't upgraded.

Audiograbber is what I use. One click and the track names are all in. You can even fix them if they are wrong (they are seldom wrong). The software is free. It's small and has no spyware etc. It works best with the Blade or Lame encoder. PM me for setup details if you get stumped. It will convert to MP3 anywhere from low quality to 320.

Musicmatch Juckebox

Plus version includes track/title/cd art lookup online for any song, regardless of whether or not it has the information "encoded" or not. Compares the directory names, filename, and length, etc, to suggest matches.

It autosorted/named my 6gb of mp3s and categorized by tempo, genre, year, mood, etc as well.

I agree with Ray, Musicmatch Jukebox. Best program I've used to rip, file, sort all of my CD's. They have a free download here, Musicmatch. But if you can, spend the extra money and buy the upgrade to Jukebox Plus. Many more features and faster.
