Based on a CEL I got, I'm thinking that I might end up needing a new catalytic converter. I have two questions:
1) Are there exhaust systems that I can buy and install myself that bypass the cat? I.e. a cat-less exhaust system?
2) Do cat back exhaust systems like TruBendz include a cat, or do I need a new cat before a new exhaust system?
The only reason I would do a new exhaust system is if I would end up spending some money on a cat anyways and for a little bit more I could do a new exhaust system by myself. Thanks!

Cat back usually refers to everything after the cat

Go new guy go!
Yes a CAT-back refers to all the exhaust after the CATalytic converter. You can buy aftermarket Cat converters. I know trubendz has them. I'm sure there are other sites. BUT before you go buying things on assumtions, what are the actual codes? You could get lean/rich codes because of a screwed up MAF sensor. So get the codes read before you go shopping.

Based on the code you got? Post the code so we can all share...
Also you do realize that these cars have 3 cats on a V6 model. Right?
If you cat is going it more likey to be the manifold cats crumbiling.
Also as your car is a 2000 model you may still be within the cat emission warranty.
Check this out or you'll be paying $2k for no reason to fix it.

I forgot the codes I've gotten (the actual numbers anyways). Now that I know how important the actual numbers are, I'll write them down next time. This whole area is very confusing to me, so I apologize for my ignorance. I think I'll just wait until I have codes again, or the car is running roughly before I make any decisions.
By-the-way, I just read last night about the 80,000 warranty on the cats. Unfortunately, I got the cat CEL at 80,500, and am now at 81,500. So close, but not close enough... Thanks!

LOL. I got my P0420 (Inefficient Precat Bank 1) at 8 years and 1 month (around 65K, warranty was 8yrs/80k). Welcome to the club!

Did you fix it? I'm wondering if my car is running fine, and I'm getting good gas mileage, do I really even care about fixing these codes or do I just keep having AZ erase them...
